RAW CARROT AND BEETROOT SALAD RECIPES by May Smith

SERVES 4

2 carrots, peeled and grated
1 beetroot, peeled and grated
2 cloves fresh garlic, peeled and finely grated
2 cm piece fresh root ginger, peeled and grated
1 tsp each of sunflower, pumpkin and black mustard seeds
small handful chopped fresh coriander with stalks
1 Tbsp olive oil
1 Tbsp lemon juice


1. Combine the carrots, beetroot, garlic and ginger in a salad bowl.
2. Sprinkle over the seeds and coriander, and drizzle over the olive oil and
lemon juice.
