Lazy Lasagne Recipes - How Foods Fight Cancer


MAKES 8 SERVINGS

Your days of preparing complicated, high-fat lasagne are over. This version uses uncooked lasagne
noodles, which makes it extra-easy to prepare. Enjoy this cholesterol- and dairy-free meal,
which also boasts plenty of filling fiber and cancer-fighting nutrients. Top this dish with a generous
sprinkling of fortified nutritional yeast for a cheesier flavor and added vitamin B12.
 

3 pounds fresh spinach, cleaned and chopped, or 1 bag (16 ounces) frozen chopped spinach, thawed
1 pound firm reduced-fat tofu, mashed
4 garlic cloves, minced or pressed
1 teaspoon salt
2 cans (28 ounces each) tomato sauce
1 pound whole wheat lasagna noodles
10 button mushrooms,sliced, or 3 cups chopped vegetables (your favorites)
10 fresh basil leaves, thinly sliced, or 1 teaspoon dried basil
1 teaspoon dried oregano
1⁄4 cup vegan Parmesan cheese or nutritional yeast flakes


1. Preheat the oven to 325 degrees F. Combine the spinach, tofu, garlic,
and salt in a large bowl.

2. Pour 1⁄2 cup of the tomato sauce over the bottom of a 9 x 13-inch
baking pan. Arrange a layer of the lasagna noodles over the sauce,
overlapping the noodles slightly. Spread half of the spinach and tofu
mixture on top of the lasagna noodles, and cover the spinach and
tofu layer with another layer of lasagna noodles. Add a layer of some
of the tomato sauce, enough to cover the noodles, and then add a
layer of the mushrooms. Sprinkle half of the basil and 1⁄2 teaspoon
of the oregano evenly over the mushrooms. Continue to add layers
of noodles, spinach and tofu, noodles, tomato sauce, mushrooms,
and the remaining basil and oregano until the layers reach the top of
the pan. The final layer should be sauce. Sprinkle the vegan Parmesan
cheese evenly over the top.

3. Cover tightly with aluminum foil and bake for 1 hour. Uncover
and stick a knife through the center of the lasagne to make sure the
noodles are completely cooked. Uncover and let cool for 15 minutes
before serving.

4. Stored in a covered container in the refrigerator, leftover Lazy
Lasagne will keep for up to 3 days.
