Red Bean Wraps Recipes - How Foods Fight Cancer


MAKES 4 SERVINGS

Instead of buying fast food, prepare these wholesome wraps whenever you need a quick meal.
They are delicious hot or cold and are loaded with health-supporting fiber. The chile adds
spiciness; you can use more or less according to your taste.



11⁄2 cups cooked or canned red or pinto beans, rinsed and drained
1⁄2 cup chopped fresh cilantro
1 Anaheim chile, seeded and finely chopped
1 garlic clove, peeled
1⁄2 teaspoon salt
4 whole wheat tortillas
1⁄2 cup salsa
1⁄2 cup finely chopped sweet onion
1 large tomato, chopped
1 to 2 cups prewashed salad mix


1. Combine the beans, cilantro, chile, garlic, and salt in a food processor
and process until smooth.

2. For warm wraps, heat the bean mixture in a microwave. Warm the
tortillas, one at a time, in a dry skillet over medium heat. Alternatively,
warm the tortillas in the microwave. Spread one-quarter of the bean
mixture in a line down the middle of each tortilla. Top with the
remaining ingredients in the order listed and roll each tortilla around
the filling.
