MAKES 4 SERVINGS
These low-fat home-fried potatoes make a delicious breakfast or side dish any time of day. Serve
them with applesauce or alongside Black Bean Chili and Mango Salsa.
3 russet potatoes, scrubbed
1 onion, thinly sliced
4 teaspoons soy sauce
1⁄2 teaspoon paprika or chili powder
1⁄4 teaspoon ground black pepper
5 or 6 cherry tomatoes, cut into quarters (optional)
2 green onions, thinly sliced (optional)
1. Cut the potatoes into 1⁄2-inch cubes and steam them for about 10
minutes, or until just tender. Remove from the heat and set aside.
2. Heat 1⁄4 cup of water in a large nonstick skillet and add the onion.
Cook, stirring frequently, until the water has evaporated and the
onion begins to stick to the pan. Scrape the pan as you add another
1⁄4 cup of water, and continue cooking until the onion once again
begins to stick. Repeat this process until the onion is very brown
and sweet. This will take about 15 minutes.
3. Add the potatoes to the skillet with the onion and sprinkle with the
soy sauce, paprika, and pepper. Cook, turning the mixture gently with
a spatula, until the potatoes are golden brown. If desired, garnish
with the tomatoes and green onions.
4. Stored in a covered container in the refrigerator, leftover Breakfast
Home Fries will keep for up to 3 days.
