How to Toast Grains

  • Toasting grains before cooking them adds great flavor without any additional ingredients.
  • Any grain—such as brown rice, couscous, millet, or quinoa—can be toasted before it is cooked.
  • Simply place the grain in a dry saucepan over medium-high heat and cook, stirring constantly, until the grain darkens slightly, about 5 minutes.
  • Remove from the heat and add the standard amount of water called for to cook the particular grain you are using. (See table 4, for amounts of water and cooking times for a variety of grains.)
  • Bring to a boil, lower the heat, and cook until all of the water has been absorbed (the amount of time will vary depending on the grain used).
