Soybean Snacks (Edamame) Recipes for Appetizers - How Foods Fight Cancer

Edamame is the Japanese term for young green soybeans. If you’ve never tasted this delicious
and highly nutritious snack, you’re in for a real treat. Edamame is sold fresh in Asian markets
and some specialty stores. It is available either shelled or unshelled in the frozen food section of most supermarkets and natural food stores. Soybeans are higher in fat than any other bean, so enjoy this snack along with a low-fat meal to minimize your overall fat intake.
6 cups water
1 pound unshelled edamame
1⁄2 teaspoon salt (optional)
1. Bring the water to a boil in a large pot. Add the edamame and
return to a boil. Lower the heat slightly, cover, and cook for about
8 minutes, until the beans are just tender. Drain and toss with the
optional salt.
2. Transfer to a serving bowl and provide a plate for the discarded
pods.
3. Stored in a covered container in the refrigerator, leftover Soybean
Snacks will keep for up to 3 days.
