MAKES 6 SLICES (6 SERVINGS)
Tofu works just like eggs when it comes to french toast, without the cholesterol and saturated
fat that eggs would normally contribute.
8 ounces low-fat silken tofu
1 ripe banana
1⁄2 cup water
1 teaspoon light molasses or maple syrup
1⁄2 teaspoon ground cinnamon
6 slices whole wheat bread
1. Combine the tofu, banana, water, molasses, and cinnamon in a
blender and process until smooth. Pour into a shallow dish.
2. Place a nonstick skillet over medium heat. Dip each slice of bread
into the banana mixture and brown it on both sides in the skillet.
You will need to brown the bread in several batches depending on
the size of your skillet.
3. Stored in a covered container in the refrigerator, leftover Tofu French
Toast will keep for up to 2 days.
