This rich-tasting, creamy dressing has no added oil. Its creaminess comes from tofu.
1 package (12.3 ounces) firm silken tofu
2 tablespoons freshly squeezed lemon juice
3 tablespoons seasoned rice vinegar
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1⁄2 teaspoon dried dill weed
1⁄4 teaspoon salt
1. Combine all of the ingredients in a food processor or blender and
process for 1 to 2 minutes, until completely smooth.
2. Stored in a covered container in the refrigerator, Creamy Dill Dressing
will keep for up to 1 week.
