Spinach Salad with Orange, Radicchio, and Sesame Recipes for Salads and Salad Dressings - How Foods Fight Cancer
MAKES ABOUT 8 CUPS (8 SERVINGS)
Spinach and radicchio, garnished with tangy citrus and flavorful sesame seeds, make a colorful
salad. Sesame seeds are a great source of highly absorbable calcium and vitamin E, known for
its antioxidant activity.
2 tablespoons apple juice concentrate
1 tablespoon orange juice concentrate
1 tablespoon balsamic vinegar
1⁄2 teaspoon potato flour
1⁄4 teaspoon salt
1 bag (10 ounces) spinach
2 cups loosely packed radicchio leaves
1 orange, peeled, seeded, separated into sections, and cut into bite-size pieces
2 to 3 tablespoons unhulled raw sesame seeds
1. To make the dressing, combine the apple juice concentrate, orange
juice concentrate, vinegar, flour, and salt in a small bowl. Mix well
and set aside.
2. Wash the spinach and radicchio and pat dry or dry in a salad spinner.
If the leaves are large, tear them into bite-size pieces. Place in a salad
bowl and add the orange pieces.
3. Toast the sesame seeds for about 2 to 3 minutes in a heavy skillet
over medium-high heat, stirring constantly, until they become fragrant
and begin to pop. Remove from the skillet and let cool.
4. Just before serving, add the dressing to the spinach mixture and toss
until evenly distributed. Sprinkle with the sesame seeds and serve
immediately.
